This veggie quiche is my favorite recipe after trying SEVERAL. Once it has cooled, I always cut it into thick slices, wrap it and freeze it. Then when Mitch and I need something for lunch, we take it out in the morning, pop it in the toaster oven at noon and it’s delish! I like mine with a side of Greek yogurt or cottage cheese and hot sauce. Here’s the recipe:
Chopped 🫑 with googly eyes
Chopped zucchini
Chopped 🍅 … set veggies aside
6 eggs blended with 1 cup of Greek yogurt and whatever spices you like
Pour veggies into the crust then add the egg concoction. Place tomatoes on top.
Bake at 375 for 30-35 minutes and enjoy!
