Be the master of your cookout with this Ranch Hand Leftover Brisket Smash Burger 🍔🔥
Ingredients ⬇️
5 lbs brisket scraps
10 oz whole jalapeños
2 tsp red pepper flakes
1 cup mayonnaise
1/4 cup bbq sauce
2 tbsp brown mustard
1/2 tsp garlic powder
1/2 tsp smoked paprika
1 tsp black pepper
1/2 tsp salt
Pit Boss Lone Star Brisket Rub
Candied bacon
1 red onion, thinly sliced
Pickle slices
16 slices of cheddar cheese
8 potato buns
Instructions ⬇️
1. Start by taking your leftover raw brisket and trimming off any excess fat. The ratio should be 80/20 meat to fat. Cut the trimmed pieces down to small chunks that will fit into your meat grinder.
2. Cut the jalapeños into quarters or large chunks.
3. Using a large grinding dyes, grind the meat with the jalapeños, alternating between the two until all of your meat and jalapeños are ground.
4. Switch out the large dyes for a medium or small-sized dyes and grind the meat and jalapeño mixture again. Using your hands, mix the ground brisket with the red pepper flakes to ensure even distribution.
5. Form the ground brisket into 16, 4.5oz portioned balls and place them in the refrigerator to chill.
6. Preheat your Pit Boss griddle to medium-high heat.
7. Cover the surface of your griddle with butter and place all the buns open-side down. Remove from the griddle once buns are toasted and golden brown. Increase the griddle to high heat.
8. Evenly space out the burger portions on the griddle before smashing the patties thin and seasoning with Pit Boss Lone Star Brisket Rub.
9. Flip the burgers and top with cheese before removing from the griddle.
10. To make the sauce, combine mayo, BBQ sauce, spicy mustard, garlic powder, paprika, black pepper, and salt. Whisk together until everything is combined.
11. To assemble the burgers, layer the sauce, two smashed patties, candied bacon, pickles, and onions. Finish it with the top buns and place a toothpick through the center to hold it all together.
12. Serve immediately and enjoy!
