Day 23 of Just Cook January is sheet pan chicken fajitas, and this one is on repeat at my house. It’s everything you love about fajitas with almost zero cleanup. Just toss the chicken and veggies with seasoning, roast it all on one pan, and dinner is done. Easy, colorful, and always a hit.
