Ingredients
The Base: 2 cups Kala Chana (Black Chickpeas), soaked overnight.
The Aromatics: 1 large onion (sliced), 3–4 green chilies (slit), 2 bay leaves.
The Pastes: 1 tsp garlic paste, 1 tsp ginger paste.
The Spices: ½ tsp turmeric powder, ½ tsp red chili powder, 1 tsp roasted cumin powder.
The "Secret" Thickener: 1 ½ tbsp besan (chickpea flour) mixed with ¼ cup water.

Instructions
1. Prep the Boot
Drain the soaking water and rinse the chana. In a pressure cooker or deep pot, add the chickpeas with enough water to cover them and a pinch of salt. Cook until tender but not mushy. Drain (reserve a little liquid if you like) and set aside.

Heat oil in a pan over medium heat. Toss in the bay leaves, sliced onions, and green chilies. Sauté until the onions soften and turn translucent.
