Louie the Cardinal wanted to make his favorite Irishman, President Gerry Bradley, feel at home this holiday season, so he’s baking up a fresh batch of his Nana Ellen’s Irish Shortbread Biscuits to share with the president’s family and all of you in Card Nation. ** Fun fact to impress Cards fans this season: Ellen Patterson, the wife of former College of Arts and Sciences dean and acting president John Patterson, had the original idea for UofL to adopt the Kentucky state bird as its mascot over 100 years ago in 1913.
