In this video, I record my first impression of the newly released Holyrood Noir Trilogie. These three whiskies aim to showcase how a combination of yeast and cask maturations effect the final whisky. Our three whiskies are;

Premier Cru - Sparkling White Wine Yeast + Chardonnay & White Wine Cask
Burgundy - Burgundy Yeast + Burgundy Barrique
Bordeaux - Bordeaux Yeast + Bordeaux Barrique

All three whiskies are pot still distilled and start their maturation periods in ex-bourbon barrels followed by a finishing period in their respective casks. All three of them are fermented using their specialty yeasts.
