The unique makeup of someone’s saliva may change how they experience food. Researchers @PurdueHHS are studying variations from person to person by observing how salivary enzymes change the texture of starchy snacks and how well saliva emulsifies fat and water. Their insights about the biochemistry of saliva could lead to more appealing, healthier food design.
