Yes! These are possible in a real match, I've done it on For Glory players before, that might not mean much, but it's possible! =] You can react to an opponent's landing or get up option into a jab lock set up!
You don't want to attempt these on really light characters, you are recommended doing these on fast fallers/heavyweights for best results!
I like to use forward tilt as a jab lock starter, it's easy and works at 60% which can lead to a kill.
To finish your jab lock, you should use your forward smash so you don't stale your up smash. You can use down smash since it's easier but it's not as effective.

•10%: Back throw to jab lock to down tilts to f smash
•20%: Forward throw to jab lock to down tilts to f smash
•130% down tilt to jab lock to charged up smash, NOT in video
•60% f tilt to jab lock to down tilt(s) to Forward Smash
•70% jab to jab lock to down tilt to f smash, NOT in video
•65% forward air to jab lock to one down tilt to f smash
