CHAI RECIPE
(for 6 cups of chai - scale up or down as you like)
Ingredients:
- 7 cups of water (1 cup per cup of chai, plus one extra for the pot that gets lost to steam)
- 6 Tbsp black tea (we use Brooke Bond Red Label or Taj Mahal)
- 6-12 tsp sugar (use 1-2 tsp per cup of chai, depending on how sweet you like it)
- 1 Tbsp ginger, chopped/crushed
- 3 Tbsp green cardamom pods, crushed a bit
- 1 small stick of cinnamon, crushed a bit
- 2 cloves (be very careful if adding extra - cloves are very strong)
- Milk to taste
Directions:
1. Crush your spices (using a mortar & pestle if you have one)
2. Boil the water, add the tea, and continue to boil for another minute.
3. Add the spices, and continue to boil for another 2-3 minutes.
4. Add in the sugar and stir to dissolve.
5. Take the tea off the heat and strain through a fine mesh strainer (throw away the tea leaves and spices).
6. Pour into a cup for tea and add as much milk as you like.
