We are in Grenada set up beside a beautiful river by the Annandale Waterfall with the Ital/Vegetarian chef Joachim We get absolutely blasted by rain, but that's not enough to stop this chef from keeping the fire blazing! We start off with a Grenadian classic called Tania Log (Taro Porridge), grated and boiled with coconut milk, seasoned with nutmeg, cinnamon and brown sugar. Joachim also cooks up some incredible Zucchini fritters, freshly grated, with scallion, season pepper, onion, garlic, and cooked over hot coals. This is for all the ital/vegetarian/vegans out there, hope you enjoy! Thanks large to Joachim, Tamintra & Serena for all their hospitality...got to love GREENZ 🇬🇩.
