Recipe for delicious pumpkin muffins. So quick and easy and a great winter treat.

After uploading and watching this video, I realized that I had mistakenly said baking powder when I meant baking soda. I've added a link explaining the difference. Still not certain which it should be. What do you think?

RECIPE

PUMPKIN MUFFINS
1 3/4 cups all purpose flour
1 cup granulated sugar
1/2 cup brown sugar
1 tsp. baking soda (NOT Baking Powder, YIKES)
1/2 tsp. salt
2 1/2 tsp. pumpkin pie spice
2 eggs
1-15 oz. can pumpkin puree (about 2 cups)
1/2 cup oil (unsweetened applesauce can be substituted)
1 tsp. vanilla
Optional: 1 cup powdered sugar

Preheat oven to 375 degrees F. Combine wet and dry ingredients in separate bowls.
Combine pumpkin mixture with flour mixture and stir until well mixed.
Put batter into lined muffin tins.
Bake at 375 degrees for 20-22 minutes. Cool on rack. Dust with powdered sugar if desired.
Makes 12 muffins.
