For the salt and shredded seaweed dressing: フランスのFleur de Sel (or any other large-flaked salt) 刻み海苔 Kizami nori (shredded seaweed)
For the negi and ponzu dressing: ネギ Green onions 自家製のポン酢 My homemade ponzu. (Yes, you may use store bought ponzu, but it won't taste NEARLY as good!)

520g flour (Italian, "00" type)(You can substitute other kinds of flour -- such as North American bread flour -- but this will produce a worse result. Also, "00," refers to the GRIND, and not the actual quality of the flour itself. There are plenty of low quality, "00," flours on the market. Best to go with a known brand such as Caputo, or Reggia.)
420g water (preferably imported from Italy)
11g salt (preferably sea salt, from Italy)
11g yeast (Quick rise type)
30g sourdough starter
Note: the higher hydration version yields more bubbles in the crust.
65% Hydration formulation (for less confident bakers):
500g flour
325g water (preferably imported from Italy)
10g salt
7g yeast
20g sourdough starter
Oven temperature: 450 degrees F. (232 degrees C)
Note: the 65% hydration version produces a crust that is more like ordinary bread. I started with this, but I recommend that you move to the 80% version as soon as possible, because it really does yield a better result.

(Dont be fooled by FAKE pizza!)Maplecook2024-07-14 | Neapolitan pizza dough is the most recognized in the world, but many get it wrong…and the other night, I ate probably the worst one I ever had. Neapolitan pizza dough is made up of very few ingredients, water, salt, yeast and all-important flour. The taste and crunch make all the difference, and these guys messed up just about every step. Not enough basil. Cheese was burnt, and of the wrong type. The crust was ALL wrong, and had zero leoparding. It was on the level of a cheap, frozen pizza, even though they called it, “Italian,” and, “Margherita.” And on top of it all, they charged me a premium price! Grrrrr!!

300g (10.5822 oz) of shrimp meat 1 kg (2.2 lbs) of ground pork, beef, or any meat you like 300g (10.5822 oz) of rehydrated mushrooms (I used shiitake and European blend) 100g (3.5274 oz) of ginger 20g (0.705479 oz) of pepper (I prefer black, but traditionally, white pepper is used) 20 ml (4.05768 tsp) of sesame oil 20 ml (4.05768 tsp) of soy sauce (I prefer Japanese, but use what you like.) 30 ml (6.08653 tsp) of Xiao Shing wine (Sorry, there is no substitute for this.) 30 ml (6.08653 tsp) of Oyster sauce 10g (0.35274 oz) of salt (I used Umami salt, but regular works fine) 20g (0.705479 oz) of Corn starch 30 ml (6.08653 tsp) of oil of your choice (I used Sicilian EVOO, even though a lot of people say I shouldn't.) 1 Egg
For making the dumplings, you can use Siu Mai wrappers, but Wonton wrappers work just fine too. I prefer Wonton wrappers, actually.
For lining the plate when steaming: 2 handfuls of arugula 110g (3.88014 oz) of ginger A few splashes of sesame oil
