Hey guys so I have a very easy recipe for you today. These cookies are incredibly soft and I will definitely be making these again. I truly hope you give these a try and share with your friends and family. Thanks so much for watching.
Recipe:
Ingredients:
1/2 cup margarine
1/4 cup packed light brown sugar
1 cup granulated sugar, divided
1 tsp vanilla
6 tbsp pumpkin puree
1 1/2 cups all purpose flour
1/4 tsp salt
1/4 tsp baking powder
1/4 tsp baking soda
2 tsp ground cinnamon, divided
2/3 cups chips (I used butterscotch but use whatever you like)
Directions:
1. Melt margarine in microwave. In a medium bowl, whisk the melted margarine, brown sugar and 1/2 cup of granulated sugar together until no lumps remain. Whisk in vanilla and pumpkin until smooth. Set aside.
2. In a large bowl, mix together the flour, salt, baking powder and soda, 1 1/2 tsp of cinnamon and pumpkin pie spice. Pour the wet ingredients into the dry and mix together with large spoon or rubber spatula. The dough is very soft. Fold in your chips. Cover dough and chill in refrigerator for 30 minutes.
3. Preheat oven to 350 degrees Fahrenheit. Take dough out of fridge. Line 2 baking sheets with parchment paper.
4. Roll the dough into balls, about a tbsp each. Mix together the remaining 1/2 cup of granulated sugar and 1/2 tsp of cinnamon in a small bowl. Roll each dough ball in the sugar mixture util all sides are coated, place on baking sheet. Coat the bottom of a small glass with the sugar mixture and flatten each cookie slightly.
5. Bake the cookies for 8-10 minutes, be sure to not overcook them they will look under cooked.
6. Cool on cookie sheets for 10 minutes before transferring to cooling rack.
7. Store in container for up to 1 week. This recipe makes about 18 cookies.
