Pulled pork is the ultimate addition to most recipes 🐷🔥
Using a whole picnic shoulder, I decided to trim the skin off the majority of it, leaving just the elbow section with skin. This doesn’t serve much of a purpose except for aesthetics. But I was hoping the skin would’ve been edible. Unfortunately, it was way too hard to eat, so I used it as a mug 😂— anyways, after smoking for 14 hours, I shredded the pork and added to some enchiladas. Full recipes below 👇🏼
SMOKED PULLED PORK RECIPE:
🔸 1 whole pork picnic shoulder
🔸 Mustard Binder
🔸 BBQ Seasoning
🔸 Insert the new @thermopro Twin Tempspike
🔸 Smoke at 250°F until it reaches 165°-175°
🔸Wrap with butchers paper or foil
🔸Back on the smoker until 200°-203°
🔸Let it rest in a cooler or oven(off) for minimum of 2 hours - I let it rest overnight
🔸 Shred the pork and pour in the juices from the foil. Add BBQ sauce if you want
ENCHILADAS RECIPE:
🔹 Medium size flour tortillas
🔹 Black beans
🔹 Red Enchiladas Sauce
🔹 Green Enchilada Sauce
🔹 Pulled Pork
🔹 Shredded cheese
🔹 Place pork, beans, and cheese in tortilla
🔹 Place rolled tortilla in baking dish
🔹 Cover with both enchilada sauces and cheese
🔹Bake at 375°F until warmed throughout and cheese is melted
