Project M is a community-made mod of Brawl designed to provide an identical gameplay of Brawl's predecessor: Super Smash Brothers Melee. It is also known as "Melee 2.0".

Project M version used: 1.0 (first demo).
Dolphin emulator version: 3.0-223

HOW-TO: Play P:M in the Dolphin emulator.
PLEASE NOTE: This mini-tutorial may be outdated, so if you could not find any tutorials on how to play P:M in Dolphin, follow this one.

1. Download any of the latest builds of the Dolphin emulator at http://www.dolphin-emu.org and configure everything (ISO folder, joypads, etc).
NOTE: Dolphin 3.0 does not work. Use 3.0-223 or newer.

2. Mount the file "sd.raw" (located at User\Wii\ folder) with Gizmo Central or any other application that supports mounting raw disk images.

3. Download the Project M homebrew installer from the official site.

4. Run projectm.exe and install the files to the root of the mounted image.

5. If the installation does not produce any errors, unmount the file and search for the Homebrew Channel WAD file (Google it).

6. Open Dolphin, go to "Config" and check the "Insert SD Card" option under the "Wii" tab. Right click on "Super Smash Bros. Brawl" from the game list and select "Set as default ISO".

7. Open the Homebrew Channel WAD file with Dolphin and choose Gecko.

8. Select the first option from the menu, and enjoy P:M

NOTE: There's a small chance that Project M may not load correctly (it will only load the cheats, not the textures or stages). My best suggestion is that you try several times until P:M loads correctly. It is strongly recommended that you save the state of the game to prevent reloading it every time you want to play P:M.

This method also works with Brawl+ (and other mods, maybe).

PS: This is probably the first "Project M" video test with Dolphin emulator, since I originally uploaded it on December 2011 (waaaay before Dolphin 3.5 and P:M 2.0)...
