I picked some tomatoes from the garden this morning and went ahead and set up an impromptu summer kitchen to process them into sauce.
~The Summer Kitchen~
The concept of a summer kitchen is to keep the heat and moisture out of the house when processing vegetables and other things from the garden during the summer months. Making sauce and canning creates a lot of moisture from boiling things. With a portable set up you could have a summer kitchen about anywhere, a deck, covered patio, driveway, garage or where ever. Depending on what equipment you have available it sometimes easier to be right out the door from the kitchen so you can run back in and grab stuff or use the kitchen equipment that's inside.
~The Sauce~
For the sauce I'm just straining it out and going to boil it down a bit. Later in the week I'll figure out what I want to make with it. There are lots of options; ketchup, pizza sauce, spaghetti sauce, tomato sauce, tomato juice, tomato soup, well you get the idea. From there I'll can it and set it back for winter.
~The Strainer~
If you are interested in getting a strainer like the one I have I suggest looking on-line or at a store such as Rural King. I looked at all of the "regular" stores (Target, Sears, Wal-Mart, etc.) and never found one. I broke down and ordered on on-line and have loved it. It sure beats the pants off those old vertical hand held jobs. You can also process apples (sauce), grapes (juice) and a few other things. There are a few different screens you can get (usually extra) to make salsa and process other things as well.
