In this video we construct a Native American Teepee and fire smoke white tail deer tenderloin for 24 hours. We start by constructing the Teepee with 3 long 20" baseball diameter tree and over under wrap them together we then rotate the middle tree in the opposite direction and set it up to make a huge tripod. This will be the base for our Native American Teepee. We then add 6-7 more trees cut at the same length to the tripod, we don't tie these down we just lean them up, the tripod is strong enough to hold them as you see me hanging from it. We make a raised bed and two smaller seats by stacking wood and notching the end longs so that the other logs will sit on top without moving. We lay fox, deer and cow furs and hides on them so that we can sit comfortably. Our Teepee measures 20'x14"
We make fire with the hand drill friction fire by using basswood and Yucca. A hole dug in the middle of the Teepee lined with rocks is used to hold our fire. A smaller tripod and small bamboo sticks are used as a drying rack. We score and break the bamboo with an obsidian blade and tie them into place with bank line. We then cut our deer meat into then slices, season with juniper berry, salt and pepper. We lay the thinly cut deer strips on the drying rack and dry for 24 hours. Do not let your fire get to close to the meat, this could cause it to cook and not preserve. If it does this it will go bad.
We then wrap our Teepee in tarps, leaving the top open for ventilation. The top can latter be covered if rain comes. We leave the door open for now but will make a door soon to cover the front opening.
After 24 hours the jerky turned out brittle, I believe the fire might have gotten to hot, or too close a couple of times. You really have to watch closely. This is okay because I can re-hydrate it in a little water. It is nice and preserved, this is one way the Native American's would preserve meat. They would also bury it an pack it in salt to preserve it.
