Who eats soup in August? MEEEEEE!

I would put more carrots and potatoes, less cabbage, more tomatoes, add garlic, etc. Nice base recipe but it took a few tweaks to get it just right. But that is what is great about soup, cook meat (or not) add water or stock, and your favorite veggies, spices and aromatics et voila, soup. If there is one thing to take away from this dish, BEEF SHANKS ARE DELICIOUS! Maybe my favorite cut from my entire cow order. I usually use chuck for my beef and veggie soup and for beef stews or chili but shanks would work wonderfully in all these recipes as well. The recipe also called for using water and beef stock but the big marrow bone makes its own stock. Ok, I will stop talking about beef shanks, you might think I have a beef shank obsession, beef shanks for president, go beef shanks, its your birthday.
There is something else I want to tell you. I don't really know why I want to tell you but I am going to tell you. My kitty cat went to kitty cat heaven. She was just a couple weeks from her 18th birthday and her slow decline really sped up in the last week or so. I have an odd mix of sadness and relief, which sounds terrible but anyone who has cared for an old frail cat probably understands. She has been in several of my videos, and even my most recent video before this one. I got her as a tiny kitten when I was in high school and she has been with me through high school graduation, college, professional school, roommates, boyfriends, weddings, babies, sickness and health, until death did us part. She was a good cat and I am sad she is gone, more sad that she was hurting and sick in the end. I have never not had a cat, in my entire life. Maybe when I am an old lady I will get another cat but for right now I just cant imagine giving over my heart to another fur ball anytime soon. This has nothing to do with soup and I know long blocks of text are that last things anyone on YouTube wants to see (uhhh... why type out text when you can just blather on to a camera) and long blocks of text about a dead cat is such a total bummer. I didn't want to make a video about my dead cat because oh my goodness how horrible would that be to re-watch while editing. So I thought I would just tell you here.
Also, my mother is doing great after her surgery. She had total knee replacement, so its a longer recovery but she is on schedule and I really appreciate the kind comments on the "post-surgery meals" video.
I am not really one to do a life update style video but that is what is going on with me. I hope you are well.
