Our mid-week dinner is a simple Pork Steaks in Creamy Mushroom and Onion Gravy. We prefer pork steaks over pork chops because of the additional marbling. This is a delicious recipe that can be ready in about 30 minutes after prepping.
2 lbs Pork chops/steaks
3 tbs oil
3 tbs flour
1 med yellow onion sliced
4 garlic cloves minced
2 sprigs thyme
10 oz mushrooms
3 sweet baby peppers sliced
1 cup chicken stock
1 cup heavy cream
.5 cups chopped spinach (optional)
Salt and pepper
Red pepper flakes optional
Season Pork with salt and pepper then flour
Add 1 tbs oil hot pan and brown pork on each side
Remove pork and leave oil in pan
Add onions to pan and cook for 5 mins
Add sliced peppers and cook for 3 mins
Remove onions and peppers
Add mushrooms and cook until golden (add oil as needed)
Return onion mix, add minced garlic and 2 tbs flour and cook for 5 mins
Add chicken stock and cook for 2 mins
Add heavy cream, spinach and thyme
Return to a gentle simmer, check salt and cook for 5 mins
Return pork to pan and cook at a simmer, flipping until desired finish temp (145) is reached (5-10 mins based on thickness)
Garnish with parsley and pepper flakes and serve
