I saw Rick Bayless do this in this video: youtu.be/92I8kZnLRWM , from his “Mexico One Plate at a Time” TV Series.

He used a fancy smancy Kamado grill. I used my trusty Old Smokey! My version is slightly different than his. Just thought I would show off how I did it.
