This is a 1970’s refreshing jello salad also referred to as “ Watergate Salad”. It’s basically a pistachio salad made with instant pudding. It’s absolutely delicious, perfect for summer months, and easy peasy to make! This recipe I got from my Mom’s old handmade cookbook she gave me when she updated hers. I grew up with my Mom making this mainly on holidays.
This recipe is typically made with cool whip, but if you choose to do what I do, you can use real whipped cream instead. I decided at the end to add and extra can of pineapple, I used a 20 ounce can of chunked pineapple. It really enhances this recipe although it is not in my Mom’s recipe.
Also, my Mom’s recipe calls for 2 packages of pudding mix, I’ve always used just 1.
RECIPE: ( 1 )3.4 oz package pistachio instant pudding, (1) 20 oz can crushed pineapple, 2 cups mini marshmallows, 1 cup chopped pecans OR walnuts, (1) 8 oz container thawed cool whip OR whipped cream to equal same amount. ( my recipe underneath) maraschino cherries for garnish.
Whipped cream version: 1 1/2 cups heavy whipping cream, 3-4 tbsp powdered sugar, 1 tsp vanilla
