As soft and fluffy as a pillow, this Japanese sausage bread also keeps well, it allows for a longer shelf life because of how well it retains moisture. The secret?

The Yudane method! Originating from Japan, this method involves mixing boiling water along with a small amount of the bread dough's flour. This gelatinizes the starches in it, making them more capable of retaining water and additionally sweetening it.

All in all, the method is a quick additional step to make our bread taste better and stay softer. Enjoy!

Ingredients

Main Dough
200 g bread flour
20 g milk powder
40 g sugar
1/2 tsp salt
1 tsp instant dry yeast
50 g whole egg
50 g water
35 g unsalted butter

Yudane
50 g bread flour (20% x 250 g - total flour)
50 g water

Toppings
black sesame seeds
egg yolk for egg wash
