This is the best cava I’ve tried so far, even better than a lot of champagnes. Made from 55% Xarel·lo, 30% Macabeo and 15% Parellada grapes. 3 months aging with the lees in the vat followed by minimum 20 months of oak aging.
This ‘brut nature’ (dry) cava is called “Keiva” and is exclusively made for HermanWines in the Netherlands by Gallina de Piel.
Gallina de Piel is a wine company by David Seijas (sommelier of El Bulli) and Guillem Sanz.
The song ‘How bout us’ is recorded more than 40 years ago by the R&B group Champaign in 1981.
