CORRECTION ON THIS VIDEO
The HUD at 7:49 is actually showing an aircraft with a nose up attitude maintaining level flight - the HUD Horizon line is not above the Earth horizon due to this nose up attitude as it will appear the same if the aircraft were descending. However, Nick still expect the airplance to ascent and the altimeter to increase, so the point is still valid.
