What else would you be doing on a wild Sunday morning where the rain is spilling from the sky like a waterfall and the wind is gale force. I am all out of pesto, so it is time to make some more.
Ingredients:
Wild Rocket
Garlic bulb (Unfortunately there is no wild garlic in season at the moment)
Dry Basil (My fresh Basil needs re growing)
Parmesan Cheese
Cashew Nuts (I wanted a change from pine nuts)
Olive oil
a small amount of lemon juice
a small amount of salt and pepper
I make my pesto less oily than that purchased in the grocery stores, you can make yours oilier by just adding more oil. It can be added to pasta, spread on bagels, put onto cheese and crackers, or enjoyed any way you like. I added a good few cloves of garlic and this gave it a lovely 'zing'. Nothing is measured, I just go by texture and taste. LOVE IT! 🥰😂
