Persimmon Cookies
1 cup persimmon pulp (about 3 fruits)
1 cup sugar
1/2 cup shortening
1 egg
1 cup raisins
1 cup walnuts
1 cup chopped dates
2 cups flour
1 tsp baking soda
1/2 tsp each cinnamon, cloves, nutmeg
dash of salt

Cream sugar and shortening. Add pulp and eggs. Stir in raisin, nuts, dates. Mix dry ingredients and mix into creamed mixture. Drop onto cookie sheet with teaspoons or a cookie scoop. bake in a preheated oven at 350F for 15-20 minutes.
