We just got a Mini Instant Pot for the van, and we're so excited to start using it. Today we made a Hearty Beef Chili using all freeze dried ingredients.

It's so quick and easy to make chili in an instant pot. The mini instant pot is perfect for van life, because it's small and only uses 700 watts on high setting. In addition to pressure cooking, you can slow cook, steam, saute and even bake. We love this Instant Pot Mini!
We've been using freeze dried foods in our daily cooking for years, but now that we are often cooking in our small van kitchen we love it even more. Freeze dried is so convenient, because it doesn't need to be refrigerated, and there's no thawing, washing, peeling, or chopping.
