I usually make a really big batch, then I store it in glass jar. This can last for weeks in the fridge. So whenever you need some nuoc mam cham all you have to add are some chopped garlic, chili, and lime and there you have it. This has become my family favorite dish. It's on the request list every week. Ingredients - 2lbs pork spare ribs- 50g ginger, roughly chopped- 10 garlic cloves, peeled- 1/2 cup soy sauce- 1 onion, whole peeled- 2 tsp salt- 4 litre water Garnish: - 1 tsp sesame seeds, toasted- 2 green onions, chopped Sauce: - 3 tbsp gochujang- 1 tbsp soy sauce- 1tbsp rice vinegar - 1 tbsp honey- 1tbsp sesame seeds- 2 tbsp strawberry jam - 3 tbsp garlic, minced- 3 tbsp ginger, minced- 1 tbsp sesame oil Directions - add all ingredients: ribs, soy sauce, salt, garlic, ginger, onion, and water in the Instant Pot. Cook for 35mins on high pressure. - preheat oven to 400F - for the sauce, add all the sauce ingredients in a bowl and mix well. Set aside - arrange cooked ribs on a baking tray, lined with parchment paper. - brush ribs with the sauce on one side.
