🇰🇷 Korean Pancakes Recipe(야채전):
🍠 4 cups finely chopped or shredded vegetables(Pick 3 or 4):
Sweet potatoes, green onions, celery, cilantro, zucchini, carrots, mushrooms
💧Add 2 cups flour, 2 cups water, and a teaspoon of salt to the veggies in a large mixing bowl.
🥣 Stir together until combined. Batter should be sticky, but workable.
🍳 Over medium heat, add 1Tbsp oil to a frying pan. Once heated, add a scoop of batter, and gently flatten with a wooden spoon until it is roughly 1/2 inch(1cm) thick. Cook on one side for 3-4 minutes, then flip, and add oil if needed so that the pancake can easily slide around on the pan as you work it.
🍛 Cook both sides until they start to lightly brown from the oil. Remove from pan, quarter, and serve with dipping sauce or just enjoy plain!
🫙DIPPING SAUCE - 1Tbsp Soy Sauce, 2 tsp white vinegar, 1 tsp Korean hot pepper flakes, 1 tsp toasted sesame seeds. Add all ingredients to a jar with a watertight lid, shake, and serve.
