A full week of meals for our family of four. I also show you how I prepare everything. Exact measurements for the recipes are below. Do you mealplan and/or foodprep?

RECIPES:

Homemade Pizza:
For the dow I used this recipe:

I used wholegrain spelt flour instead of regular all purpose flower
For the sauce I used store bought pasta sauce. I blended it with one zucchini and one yellow bell pepper as well as 2 tblsp of granulated onion. I used sliced and grated mozarella on top, and a bit of chilli flakes. Baked in the oven 200 celcius.

Pasta and a salad:
Fried 7 small onions in extra virgin olive oil for about 30 mins / untill they start to caramelize. Add ground beef and when that is almost cooked trough, add veggies of you choice. I used zucchini, carrots, leek, celery. Added salt and pepper and a lot of pasta sauce and garlic. Let it simmer for a bit.
Salad: half a head of iceberg lettuce, some mixed lettuce, red onion dressing, red bell pepper, white cheese, smoked chicken.

Veggie soup and broccoli patties:
To a pot of boiling water at onions, 1,5 head of broccoli and 1 cup of pumpkin. Add a stock cube, I used a beef stock cube. Boil for ten minutes. Add garlic cloves. Blend everything. After blending I added 1 potato in cubes and boiled for an additional 8 minutes.


Pumpkin pancakes:
In a pot with boiling water add about 1 cup of pumpkin and boil until tender. Pour away excess water (but there should be enough water left to blend the pumpkin in - the pumpkin should be covered in water). Blend. I then added whole grain spelt flour but all purpose flour would work as well. Add 5 eggs and a bit of salt. Mix it well. Now check if you have the right consistency for flat pancakes. The batter shouldn't be too thick but also not too thin... Bake a small 'test pancake' if you need to and see if you need to add more water. Or flour, if you think the batter is too thin.

Chicken dill:
Fry small pieces of chicken in a skillet untill cooked through, add cream and let it simmer for 2 minutes. Add fresh parsley and dill and heat for another minute.

Chicken soup:
Put chicken (bone in) in a slow cooker for 24 hours on low. After that strain the liquid and put it in a soup pot. Set the chicken aside and seperate meat from bones. To the stock in your soup pot, add about 6 cloves of garlic, a small piece of fresh turmeric, half of a spicy pepper (seeds removed), small piece of ginger. Add 5 small onions, some leek, carrots and leek. Add salt. Add 1 tsp chives, 1 tsp curry, one fourth tsp nutmeg and half a tsp of sage. Add 2 tblsp of garlic mustard or normal mustard. Boil for 20 minutes. Add shredded chicken.
I served it with boiled eggs and apple sauce for the kids :)

Zucchini patties:
Don't use vegan white cheese unless you deepfry the patties. But if you deep fry them: form them into balls.
Grate the zucchini (2) and onion (2-3), put in a strainer and press the liquid out. Add 4-5 tblsp cut up fresh mint leaves, 2-4 cloves of garlic, salt and a lot of pepper. Also add 3 tblsp crushed flax seeds that you soak in lemon juice first (for every tablespoon flaxseed use 2,5 tablespoons of lemon juice, so 7,5 in this case). Add cubes of white cheese. Add flour (150 grams) and corn starch (50 grams). Mix well. Add 1-2 tblsp baking powder and mix that in too. Fry them in a skillet, on both sides untill golden brown.
