This is actually really easy! Dump the fish and quickly pull a bomb. Get bottle in hand, fall into the water and quickdraw sword. The bomb should hit you and kill you before you put bottle away. Now swim towards the fish and after you are out of the water, quickly hit shield and target and shield swipe the fish.
The was a problem when we first discovered this and that was most of the time Link would swing that bot
