You can parry most of this guy's attacks without much trouble. Dodging works too, but parry/deflect will break him for big damage or souls.

Otherwise just be sure to shoot down the tether on the house attack and the central tether on the 5 tether attack. Cut the tether on his to weaken him. It's best to turn off lock-on to attack the tether, but keep him in sight so you can react to his attacks.
