Seems everything has two phases now! Lol Thankfully the first phase isn't too bad.
I recommend the hammers Oni weapon as it's OP on bosses, even unupgraded. Charge it up when you have an opening and smash! Always cut off the tail (lower left option) on staggers as it takes a big chunk of damage and you don't have to worry about unavoidable attacks.
Other than that, phase 2 is mostly the same other than it powering up. Just watch for the grab attacks as the tonge turns blue but while powered up, its front claws are also blue, so it can be harder to notice.
