While camping with the fellas in the Ocala National Forest, I show a quick recipe that's easy to make and very good. See complete recipe below:
1 tablespoon cooking oil
1 lb Cajun sausage (andouille) sliced into ½ inch pieces
1 onion, chopped
1 green pepper, chopped
1 rib celery, chopped
2 cloves garlic, minced
2.5 cups chicken broth
2 15.5 ounce cans red beans, drained
2 cups instant rice
Creole seasoning
Add vegetable oil to large dutch oven and add sliced sausage. Cook 4 to 5 mins. Add onion, green pepper, and celery. Cook 8 mins. Add garlic and cook 1 min. Add chicken broth and bring to a boil. Stir in beans and rice. Add creole seasoning to taste. Cover and cook 12 to 15 mins or until rice is tender.
