Oatmeal Sourdough Bread
400 g (3 cups + 2 Tbsp) all purpose flour
200g (1 1/2 cups + 2 Tbsp) whole wheat flour
160g (1 2/3 cup) oat flour (rolled oats pulsed in a blender or food processor)
18 g (1 level tbsp salt)
495g (2 1/4 cup) water
130-150g (rounded 1/2 cup) sourdough starter
Breakfast time: combine flours, salt and water, feed starter
Lunch time: combine soaked flours with starter and knead
Dinner time: stretch and fold
Bed time: shape loaf and put in a towel lined bowl, retard in fridge over night
Afternoon Day 2: allow to rise on the counter for 4-5 hours
Evening Day 2: preheat dutch oven to 500F. score loaf and bake 20 minutes, lower temp to 450 and bake another 30 minutes. remove cover and if needed bake uncovered for 5 minutes or so. cool completely before slicing.
