Nom Banh Chok (Cambodian Noodle Soup)
Serves: 2
Ingredients:
200g rice noodles
200ml coconut milk
150g white fish fillet (poached and flaked)
1 tbsp curry paste (Kroeung or yellow curry)
2 cups chicken or fish stock
¼ cup bean sprouts
Fresh herbs: mint, cilantro, Thai basil
Optional: edible flowers, banana blossom, lime wedges
Method:
Simmer curry paste in coconut milk and stock for 3–5 mins.
Add poached, flaked fish and simmer for another 5 minutes.
Prepare noodles per package and divide into bowls.
Pour soup over noodles and garnish with herbs, sprouts, and lime.
