Fino: A very dry, pale, and light wine aged under a layer of yeast (flor). It tastes crisp, fresh, and nutty.
Manzanilla: A type of Fino made in a specific coastal town. It has a unique, salty taste from the sea air.
Amontillado: Starts life as a Fino under yeast, but the yeast dies off and it ages with oxygen. It turns darker and richer with a deeper nutty flavor.
Oloroso: Fortified higher so no yeast grows, aging completely exposed to oxygen. It is dark, rich, and full-bodied.
Palo Cortado: A rare style that starts like a Fino but develops the rich body of an Oloroso.
