Ingredients
* 1/4 cup (50g) coconut oil
* 2 tbsp (30g) almond milk
* 1/2 cup (125g) Crunchy SunButter
* 1/3 cup (105g) maple syrup
* 1 tsp vanilla extract
* 1 1/4 cup (100g) rolled oats
* 1/3 cup (60g) chocolate chunks or chips
1. In a saucepan combine coconut oil, almond milk, SunButter, maple syrup, and vanilla.
2. Bring to a boil, boil for 2 minutes stirring constantly.
3. Remove from heat and immediately stir in the oats.
4. Scoop cookies onto a lined baking sheet (a cookie scoop works best here). Top each with a few chocolate chunks.
5. Refrigerate at least 1 hour until firm.
6. Eat! Keep leftovers in the fridge.
