Here’s how to make them👇🏻
🟢 For the Eclairs
½ cup almonds, roasted
¾ cup dates, soaked and de-seeded
Note: Use soft Kimia dates for better binding. If using other varieties, add more dates as needed.
🟢 For Chocolate Sauce
12 cashews, soaked (6 hrs)
¼ cup cold-pressed coconut oil
½ cup jaggery powder
½ cup cacao powder
¼ tsp vanilla powder
⅛ tsp rock salt
¼ cup water
🟢 Topping
¼ cup almonds, roasted and crushed
🟢 Method
1. In a small blender jar, blend the roasted almonds until a coarse powder. Transfer to a mixing bowl.
2. Add the soaked and deseeded dates to the same mixing bowl, and mix using your hands to form a dough until a moldable mixture is formed.
3. Divide the mixture into 10 portions and shape each one into a small cylindrical eclair.
4. Blend all the chocolate sauce ingredients until smooth. Coat each eclair evenly with the chocolate sauce and place them in the freezer for 30 minutes to set.
5. Once frozen, dip the top and bottom edges of each eclair in chocolate sauce, then roll those edges in roasted, crushed almonds. Drizzle with a little more chocolate sauce on top.
6. Freeze one final time for 30 minutes. Serve and enjoy!
