Spicy Sesame Carrot Salad Ingredients:
2-2 1/2 lbs of peeled shredded carrots (or a combo of apples+carrots, napa cabbage+carrots, etc)
1-2 clove crushed garlic
2 tsp onion powder
1/2 tsp sugar
1/2 tsp smoked Spanish Paprika
1-1 1/2 tsp Gochugaru (I prefer coarse flakes)
1/4 tsp black pepper
1/2 Tbsp salt
1/4-1/3 C roasted sesame oil
1/3 C rice vinegar
1 heaping Tbsp Chili crisp
optional (mix up the spices: consider adding 1/4 tsp coriander or celery seed or try your favorite spice blend)
optional: 1 tsp soy sauce if you like it saltier
Mix all ingredients together thoroughly, massaging spices into the carrots. Put in a large mason or Weck jar, loosely covered, overnight. Then place in fridge. Enjoy within a few days.
