Ninkasi is better known for its beer, but this French single malt whisky brings a very different kind of character to the table.
In this review, I taste Ninkasi French Whisky, an unpeated whisky matured in French oak casks that previously held Chardonnay and Viognier wines. The Chardonnay casks were probably sourced from Bourgogne, while the Viognier casks surely came from Condrieu, giving the whisky a distinctly French wine cask influence.
The casks themselves are made from French oak, Quercus robur, as is customary for wine barrels in France. At 46% ABV, this is a whisky with plenty of presence, but what surprised me most was how much it evolved as the bottle level dropped. The whisky seemed to change noticeably over time, revealing new layers and a different balance compared with the first pour.
