Happy New Year! 🎉 In today’s New Year’s Day vlog, I’m resetting our home after Christmas, sharing a grocery haul, and making a cozy Instant Pot soup to kick off the new year feeling refreshed and organized.

This video is all about a simple New Year reset—from cleaning and tidying up after the holidays to restocking our fridge and cooking an easy comfort food meal. If you love cozy vlogs, cleaning motivation, grocery hauls, and slow living, I hope this gives you the motivation and inspiration you need to start January off right.

🍲 Instant Pot Soup Recipe:
(1) yellow onion, chopped
Tablespoon good olive oil
(2) minced garlic cloves
(3) carrots, chopped
(3) celery, chopped
(1) bag of tiny potatoes
(1) grilled chicken breast, diced
(1) large can crushed tomatoes
(1) 32 oz box of Chicken stock
1/2 a head of cabbage (chopped)
(2) handfuls of baby spinach
(1) small can of corn
Dried basil
Salt & Pepper
Parmesan cheese

In a 6 qt Instant Pot use the sauté mode to sauté the onions in the oil until just before they turn translucent, add the garlic and sauté just until fragrant. Turn off the sauté mode and add crushed tomatoes, carrots, celery, and potatoes. Stir well. Add chicken stock. Add shredded cabbage. Stir well. Add 1 teaspoon of salt, 1/2 teaspoon of pepper, and a heaping teaspoon of dried basil. Stir well. Turn on the slow cook function on the Instant Pot and slow cook for 5-hours (pot will automatically set to 6-hours.) After 5 hours remove the cover and add in spinach and diced chicken. Turn off the Slow Cook function and replace the cover. Set to Pressure Cook for 6 minutes. Then let it naturally release steam (do nothing) for 18 - 20 minutes. The Instant Pot will count down the minutes. Release the steam and remove the cover. Add the can of corn, stir. Let sit without the cover for a few minutes. Turn off the Instant Pot. Ladle into bowls and sprinkle with parmesan cheese. Enjoy 😋
