This video is mostly about the new firmware for the SITH with loads of new "extra" functions. The main function of Sample or Track and Hold is the same, it is just all the "alternate" modes that is added.

Download the SITH folder and open the SITH.ino and all the other files should follow along, and just upload to your Arduino.
The modes are:
1. Sample or Track and Hold (S|TH) - Main function (not covered in this video)
6:11 2. Random Gates - like half a branches with only one input and one output.
7:02 3. Sample and Slide - Like S&H but instead it slides between the values.
10:26 4. LFO & Hold - An LFO with adjustable edges that you can Hold.
12:13 5. AD Envelope - A simple AD envelope generator.
13:12 6. Percussive Noise - Meant to be a hihat, but is probably more of a Snare or clap sound. Very 80's game bomb and gunshot kindof noises. With Decay and Sample Reduction.
14:50 6b. An extra "feature" is that the Percussive Noise can be used as a LoFi VCA if used with the input signal instead of internal noise, but only with Decay, and still with Sample Reduction for some gritty sounds.
