ignore the carelessness and any of the rng like fortress and pearls, just wanted to show the viability of hellhorses
the fastest possible horse is 99.5% faster than sprint jumping or 70% faster than a boat on water, the average horse is 33% faster than sprint jumping or 18% faster than a boat on water
usually the saddle is obtained from a desert temple (23.5% chance per each of the 4 chests, gets a saddle most of the time) but they're also in cauldron house chests 17.3% chance and blacksmiths 16.2% or savanna house chests 11.3%.
hit a horse to check how fast it runs before mounting and getting kicked off once, then feed 34 wheat to instantly tame; wheat and haybales can be used to heal its fire and fall damage
enter the nether first before pushing the horse through or it bugs out (also check if you need to build a bridge or extinguish some nearby fire), after pushing the horse in it usually starts suffocating in the nether so you have to go in immediately after pushing it in to save it (ride it away from the portal don't try pushing it)
dismount the horse as little as possible or trap it in a 2x2x2 because they are basically programmed to wander out of sight
