Minnesota to Mediterranean Walleye Dinner
PREP TIME: 10 min | COOK TIME: 5–6 min | SERVES: 2
Ingredients:
• 2 walleye fillets, boned out and portioned
• ½ tsp. Mediterranean seasoning
• 1 medium heirloom tomato, cored and sliced
• 1 medium cucumber, scored, seeded and sliced
• 1 ball fresh burrata cheese
• 3 fresh basil leaves, rough chopped
• Juice of ½ lemon
• 3 oz. extra virgin olive oil
• 1 oz. aged balsamic vinegar
• Sea salt and fresh cracked black pepper
• 1 Tbsp. salted sweet cream butter
Directions:
1. Generously season walleye fillets with salt, pepper and Mediterranean seasoning.
2. Bring a cast iron skillet to temperature over medium heat.
3. Add 1 oz. of olive oil and swirl to coat the pan evenly.
4. Add walleye fillets and sear until edges begin to brown, about 3 minutes.
5. Reduce heat to medium low, add butter and flip fillets. Cook other side until done, 1–2 minutes.
6. Turn off heat and keep fillets in pan.
7. Arrange sliced tomatoes shingled on one half of a large plate. Place burrata in the center of the tomatoes.
8. Arrange cucumbers along the opposite edge of the plate.
9. Using a slotted fish spatula, place walleye fillets in the center of the plate.
10. Squeeze lemon juice over everything, then season the veggies and burrata with sea salt and pepper.
11. Drizzle remaining olive oil and balsamic vinegar over all ingredients. Finish with a sprinkle of chopped basil.
12. Serve with dry white wine, ice cold lager or chilled club soda.
Advice:
• Sliced fresh bread or pita make a great accompaniment, as do pan-fried potatoes.
