Hope you enjoy this quick and simple pesto recipe. It can go on macaroni, used as a spread for sandwiches, spaghetti squash, etc.. If you try it, let me know or if you make your pesto a certain way, let me know.

Ingredients:
- Extra virgin olive oil (1/2-3/4C)
- Parmesan cheese (1/2 C)
- Basil (2 cups)
- Roasted red peppers (5-6)
- 3 cloves garlic
- salt/pepper
- 1 lb macaroni (I use penne/rigatoni)
While macaroni is cooking in salted water, place garlic in food processor/blender and chop. Add roasted red peppers (making sure seeds are taken out if any) and puree. Add basil, cheese, salt & pepper and puree until smooth. Take off top (or the small cap of your blender) and slowly drizzle the oil in while the blender is going. You should have a nice smooth sauce. If it's too thick, add more oil or you can thin the sauce out with some of your cooking water from the macaroni. Once macaroni is done, strain out the water and place back into your cooking pot on med-low flame. Add your pesto and stir until pesto is warmed up. Add the cooking liquid if you need to thin the pesto out. Serve right away with additional parsley/basil/cheese on top. Enjoy!
