FULL PRINTABLE RECIPE + step-by-step: sugargeekshow.com/mirror-cake-glaze-recipe
Don't skip the pour at the very beginning, it's the most satisfying part.
MIRROR GLAZE INGREDIENTS
- 2 ounces cold water, for blooming the gelatin
- 20 grams powdered gelatin
- 12 ounces high-quality white chocolate
- 5 ounces water
- 11 ounces granulated sugar
- 7 ounces sweetened condensed milk
- 1 tablespoon vanilla extract
- 2 drops white food coloring
- Gel food coloring of your choice
- 1 frozen cake
THE SECRETS TO A FLAWLESS MIRROR GLAZE
- Make sure your cake is frozen SOLID before pouring.
- Cool the glaze to exactly 90°F / 32°C — this is the only variable that truly matters.
- Keep the immersion blender below the surface to avoid adding air bubbles.
- Strain the glaze before pouring for the smoothest finish.
- Pour confidently and let the glaze flow naturally over the cake.
- Glaze the cake the same day you plan to serve it for the shiniest finish.
