Golden Apples are very rare food items that can be crafted using expensive materials such as gold, or can be found deep underground in dungeons, in desert and jungle temples, igloos found in the snow biomes, etc.
Eating golden apples will give you debuffs such as regeneration, and they're of course, really useful in combat as any health you lose will be immediately regenerated.
