I discovered Kimchi and I have not stopped... This recipe is a cross between Kimchi and Kraut... Making it Awesome.. Michelle is a friend of mine, she does not have a youtube account but she has great recipes for fermenting...

Ingredients
2 Heads of Cabbage chopped
1 lb grated Carrots.. (I used store bought)
1 red Onion Chopped
1 Handful of Wakame - rehydrated and chopped
6 Cloves Garlic Chopped
2 Inches of Ginger Shredded
1 Large Daikon Radish Chopped
1 Tablespoon Gochugaru
2 Tablespoons fish Sauce ... I used Red Boat
2 Tablespoons Lime Juice fresh squeezed
1/4 Cup Gochujang
2 Tablespoons Salt- Not Iodized
