Cozy budget friendly Mexican Picadillo loaded with vegetables. Ready in one pan and on the table in about 30 minutes.

☐ 2 potatoes (cubed)
☐ 1/4 diced onion
☐ 1 green bell pepper (chopped)
☐ 3 minced garlic cloves
☐ 3 jalapeno slices or more for heat
☐ salt/pepper to taste
☐ 1 Tbsp cumin
☐ 1 Tbsp oregano
☐ 1 Tbsp tomato bouillon
☐ 1 Tbsp chicken bouillon
☐ 1/2 can (4 oz) tomato sauce
☐ 1 bunch chopped cilantro
☐ 1 (16 oz.) bag frozen peas and carrots
☐ 3 cups water or beef broth
☐ cornstarch slurry (1 Tbsp cornstarch/2 Tbsp water)
